Founded in 1972 in Arabi, Louisiana, by Al Copeland, originally opening as a Southern-fried chicken restaurant called Chicken on the Run before being reformulated with a spicier Louisiana-style recipe and renamed after Popeye Doyle, the character from The French Connection.
