Founded in 1986 in London by university friends Sinclair Beecham and Julian Metcalfe, who set out to sell fresh, natural sandwiches without the preservatives typical of the time, after an earlier attempt at a similar shop had failed. Known for baking and preparing food fresh in each shop daily and donating unsold food to charity at the end of the day.
